Sweet Potato Miso Soup

This sweet potato soup is super creamy, a bit sweet but salty as well (thanks to the miso!). It is super easy to make and will be perfect for a quick lunch or even as an entree when you have guests over.

This sweet potato soup is super creamy, a bit sweet but salty as well (thanks to the miso!). It is super easy to make and will be perfect for a quick lunch or even as an entree when you have guests over.

Ingredients

  • 2 tbsp of olive oil

  • 1 yellow onion, diced

  • 2 garlic cloves, minced

  • 1 tbsp of grated fresh ginger

  • A pinch of red pepper flakes (optional)

  • 8 cups of diced sweet potatoes – 1 inch width (3 small sweet potatoes or 2 big)

  • 6-7 cups of vegetable broth

  • 3 tbsp of white miso paste

  • Garnishes: fried shallots*, fresh herbs and/or drizzle of cooking cream

Instructions

  • In a medium pot over medium heat, sauté the onion with olive oil for 3-4 minutes. Season well.
  • Add the minced garlic, grated ginger and a pinch of red pepper flakes. Cook for a minute or so.
  • Add the sweet potatoes and vegetable broth. Bring to a boil, reduce heat and let it simmer for 15 minutes or until the sweet potatoes are tender.
  • Scoop about ½ cup of the soup broth mixture and add it to a small bowl along with the miso paste. Mix well to dissolve. Transfer the miso mixture back into the pot and stir well.
  • With a blender or immersion blender, transform the soup into a creamy texture. Season if needed.
  • Serve with the garnishes.

Notes

  • Fried shallots:
    1. Slice 3-4 shallots (ideally with a mandoline) and place them into a small saucepan.
    2. Pour over some vegetable oil or avocado oil, just enough to cover the shallots.
    3. Cook on medium heat and let it simmer for about 10 minutes, mixing a few times. The shallots will become golden brown.
    4. Remove the shallots from the oil and place on a plate with a paper towel. Sprinkle with sea salt.
  • You’ll find miso paste in most grocery stores in the refrigerated section – often near the tofu!
