Combining two things I love: a burger and a Banh Mi!

Ingredients

  • Pickled Vegetables
  • 1 cup of carrots, cut into small sticks

  • 1 cup of daikon, cut into small sticks

  • ½ cup of rice vinegar

  • ⅓ cup of water

  • 2 tbsp of sugar

  • ½ tsp of salt

  • Patties
  • 550g of lean ground pork

  • 3 green onions, sliced

  • 3 tbsp of soy sauce

  • 3 tbsp of fish sauce

  • 1 tbsp of hoisin sauce

  • ¼ tsp of salt

  • Zest of ½ lime

  • Spicy mayo
  • ½ cup of mayonnaise

  • ½ to 1 tbsp of sriracha sauce

  • Assembly
  • Burger buns

  • Cucumber, sliced into ribbons

  • Cilantro

Instructions

  • Prepare the pickled vegetables. In a mason jar, mix ½ cup of rice vinegar, ⅓ cup of water, 2 tbsp of sugar, and ½ tsp of salt. Then add the carrot sticks and daikon sticks. Let them marinate. You can prepare the pickled vegetables a few hours in advance or even the day before.
  • Prepare the patties. In a large bowl, mix together: 550g of lean ground pork, 3 sliced green onions, 3 tbsp of soy sauce, 3 tbsp of fish sauce, 1 tbsp of hoisin sauce, ¼ tsp of salt, and the zest of ½ lime. Form 4 patties.
  • Preheat your BBQ to high heat. Cook the patties for 4-5 minutes on each side. Toast the burger buns.
  • Prepare the spicy mayonnaise by combining ½ cup of mayonnaise with ½ to 1 tbsp of sriracha (depending on your preference).
  • Assemble the burgers. Spread the mayonnaise on both sides of the buns. Add the patty, pickled vegetables, cucumber ribbons, and cilantro.
