Ingredients
1 ½ cups orzo
3 cups vegetable broth
1 tsp turmeric powder
1 head of broccoli
1 can (340ml) roasted red peppers, diced (1 cup)
2 shallots, sliced into half-moons
2 cans (142g each) Clover Leaf tuna in olive oil
1 container (125g) parmesan petals (1 ½ cups)
3 handfuls arugula
3 tbsp olive oil
Juice of ½ lemon
½ tsp salt
Pepper to taste
Instructions
- In a small pot, add the orzo, vegetable broth, and turmeric. Bring to a boil, reduce heat to low, and let it cook for about 10-12 minutes or until the orzo has completely absorbed the broth.
- Allow the orzo to cool completely.
- Thinly slice the broccoli head.
- In a large bowl, combine the cooled orzo, sliced broccoli, roasted red peppers, shallots, tuna, parmesan petals, and arugula. Add the juice of ½ lemon, olive oil, and salt. Season with pepper to taste.
- Mix well and adjust seasoning if needed.
