These corn flakes chicken nuggets are wonderfully tender on the inside and delightfully crispy on the outside. A recipe that will please both kids and adults alike. Enjoy!

Ingredients

  • Chicken
  • 454 g (1 lb) ground chicken

  • 1 egg

  • 2 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • ¾ tsp salt

  • Corn Flakes Coating
  • 1 ¾ cups corn flakes cereal

  • ½ cup panko breadcrumbs

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • Assembly
  • 1/3 cup all-purpose flour

  • 2 eggs

  • Neutral cooking oil (preferably in spray form)

  • For Serving
  • Sauce : Ketchup, ranch, spicy honey, etc.

  • To serve : salad, roasted veggies, rice, etc.

Instructions

  • Preheat the oven to 425°F (220°C) and place the rack in the middle position. Line a large baking sheet with parchment paper.
  • In a large bowl, combine 454 g ground chicken, 1 egg, 2 tsp garlic powder, 1 tsp onion powder, 1 tsp paprika, and ¾ tsp salt. Reserve the mixture in the fridge.
  • Prepare the corn flakes coating: Using a food processor, grind 1 ¾ cups of corn flakes into small crumbs. Transfer to a shallow plate and mix with ½ cup panko breadcrumbs, 1 tsp garlic powder, 1 tsp onion powder, and 1 tsp paprika.
  • Place 1/3 cup of all-purpose flour in another shallow plate.
  • In a third shallow plate, whisk 2 eggs.
  • Assemble the nuggets: With your hands, take about 1 1/2 tbsp of the chicken mixture and shape it into a nugget. Dip the nugget first into the flour, then into the beaten eggs (manipulating with forks will be easier), and finally into the corn flakes mixture, ensuring it is evenly coated. Repeat with the remaining chicken mixture. If the chicken mixture becomes too sticky, set a little bowl of water and dip your hands into the water before forming the nuggets. This should make 16 to 20 nuggets.
  • Place the nuggets on the prepared baking sheet. Spray them lightly with oil.
  • Bake for 15-20 minutes, or until golden and cooked through.

Notes

  • Airfryer : You can cook them in the airfryer at 400F for about 15 minutes.

Tips for Perfectly Succeeding with the Recipe

Depending on the type of chicken used, the mixture may be sticky. I recommend keeping a small bowl of cold water nearby to dip your fingers in before shaping each nugget.

If you’re having trouble coating the chicken nuggets in the flour and egg mixture, you can freeze the shaped nuggets for about 20 minutes before proceeding with the flour, egg, and cornflake steps. This will help the nuggets hold their shape better.

How to Reheat Chicken Nuggets

I do not recommend reheating the nuggets in the microwave. To reheat, place them in the oven at 350°F for a few minutes or use an air fryer.

Freezing

Cooked nuggets can be frozen for up to 3 months. To do this, let the nuggets cool completely, then place them on a tray in the freezer for 30 minutes. Transfer the nuggets to an airtight bag. To defrost, let them thaw in the refrigerator and reheat them in the oven at 350°F for a few minutes.
