How to Make Spiced Poached Pears?
1- Peel off each pear’s skin.
2- Cut the base of each pear so they stand up firmly on the plate when you do the dressing.
3- In a pot combine water, maple syrup, spices and orange peels to obtain a base. Then cook the pears gently in this mixture for approximately 20 minutes.
4- Remove the pears from the mixture and set them aside so that they’ll be ready when you dress the dessert.

Ingredients
4 pears (Bosc)
Approx. 6 cups of water
2 stars anise
2 cinnamon sticks
¼ cup of maple syrup
½ tbsp of grounded cinnamon
2 oranges : 1 orange peeled and zest of 1 orange
½ cup of dark chocolate chips (50%)
3-4 tbsp of milk
1 teaspoon of coconut oil or vegetable oil
Vanilla ice cream to serve

Instructions
- Prepare the Sesame & Pumpkin Seeds Brittle.
- Prepare the poached pears. Peel off each pear’s skin. Next, cut the base of each pear so they stand well on the plate when you serve them.
- In a pot combine the pears, water, star anise, cinnamon sticks, maple syrup, grounded cinnamon and the peel of one orange. Bring it to simmer and cook for 15-20 minutes. Set aside.
- When you’re ready to serve the dessert, melt the chocolate with milk and coconut oil in the microwave or a bain-marie.
- Dress the desert
- Add 1-2 tbsp. of chocolate sauce on each plate.
- Add the poached pear on top.
- Serve 1-2 tablespoons of vanilla ice cream on the side of the pear.
- Add more chocolate sauce on top of each pear.
- Garnish with seeds brittle and orange zest.
