Easy Asian Soba Noodles Stir-fry

Ingredients
Soba noodles : 300g (10.58oz) noodles
Tofu : bloc of 350g extra firm tofu
Cornstarch : 2 tbsp
Vegetable oil : 3 tbsp of oil (can be substitute with coco oil or avocado oil)
Red pepper : 1 sliced longwize (approx 1 cup)
Broccoli : 1 head of broccoli cut into fleurets (approx 3 cups)
Green onions : 2 green onions, cut longwise 1 inch
Mushrooms : 227g of your favorites mushrooms sliced
Sesame seeds (optional)
- Sauce
Maple syrup : ¼ cup
Soy sauce : ¼ cup
Water ⅛ cup
Sriracha : 1 tbsp
Lime : juice of 1 lime
Instructions
- Cook the pasta, according to instructions.
- Prepare the tofu. Press well with paper towels to remove any excess of water. Cut into cubes. In a bowl, add the diced tofu and cornstarch. Toss well to combine.
- Prepare the sauce. In a small bowl, add all the ingredients and whisk.
- In a large pan over high heat, add 2 tbsp. of oil. Add the tofu and cook it for about 2–3 minutes per side. But don’t touch it while cooking, since you want to get a nice crust on each side (approx. 12 min. in total). Reserve the tofu aside when it’s cooked.
- In the same pan, add 1 tbsp of oil with red pepper, broccoli and green onions and cook for 2-3 mins.
- Add mushrooms and cook for another 2 mins.
- Add cooked soba noodles, tofu and sauce to the pan. Toss well for about 2 minutes.
- Serve it with some sesame seeds on top and more soy sauce if needed.
