Flavorful White Beans in Tomato Sauce
Here are the ingredients to use :
- White beans : use canned cooked beans for this recipe. You can also use dry beans and cook them beforehand.
- Onion : one diced yellow onion.
- Olive oil : or any type of oil to sauté the onion.
- Garlic : 3-4 garlic cloves, depending on their size.
- Tomato paste & tomato sauce : this will give flavor to the dish. I recommend using good quality tomato products.
- Water or broth: a liquid that we mix with the tomato sauce.
- Sun-dried tomatoes: preferably canned. This will give a sweet-tart flavor to the beans and some texture as well.
- Apple cider vinegar : to give acidity and balance the flavors. You can replace it with rice wine vinegar or white wine vinegar as well.
- Honey : you can also use maple syrup.
- Spinach : to add some veggies to the dish and for the contrast of colours with the tomato sauce. This recipe calls for fresh spinach but you can also use frozen spinach.
- Halloumi : slice the cheese and grill a couple of minutes each side. Serve over the white beans tomato mixture.
How to Grill Halloumi?
It’s so easy and grilled halloumi brings so much flavor to this dish :
- First, remove any excess of water and pan dry with a paper towel.
- Slice it into ⅓-¼ inch thick pieces.
- Heat the BBQ or grill pan to medium high heat.
- Cook for about 3 minutes per side.
How to Serve It?
I like to serve this dish on its own because it’s quite filling. You can also add some toasted bread or alternatively serve it over rice.

Ingredients
White beans : 2 cans of cooked beans, rinsed (540ml/19oz per can)
Onion : 1 yellow onion, diced
Olive oil : 2 tbsp
Garlic : 3-4 garlic cloves, minced
Tomato paste : 2 tbsp
Tomato sauce : 1 ¼ cup
Water or broth : 1 cup
Sun dried tomatoes : 1 cup of diced sun-dried tomatoes
Apple cider vinegar : 2 tbsp
Honey: 1 tbsp
Spinach: 2-3 handfuls of fresh spinach
Halloumi : block of 235g, sliced into ⅓ inches thick (about 12 slices)
Instructions
- In a big pot over medium heat, sauté the onion with olive oil for 5 minutes. Season well.
- Add garlic and tomato paste and mix properly.
- Add tomato sauce, water, sun-dried tomatoes, apple cider vinegar, honey and white beans. Mix well and bring to a boil. Reduce heat and cook on low for 10 minutes.
- On a grill pan or bbq, cook the halloumi slices for about 3 minutes per side.
- After 10 minutes of cooking the beans, add spinach to the baked beans and stir well. Taste and adjust seasoning. Add water if needed, depending on the texture.
- Plate the tomato white beans with grilled halloumi on top.
