You know I love energy bites! I’ve created several, but this birthday cake version? It’s Margot’s absolute favorite—100% toddler-approved. Ever since she tried them, she keeps asking me every day, “Cake?!!” … and my boyfriend wants just as many! Let’s just say they don’t last long around here.
Ingredients
½ cup (packed) pitted Medjool dates (about 5 dates)
¼ cup almond butter
2 tbsp maple syrup
2 tbsp unsweetened milk or plant-based drink
½ tsp vanilla extract
¼ tsp salt
1 cup almond flour
½ cup vanilla protein powder
⅓ cup white chocolate chips
½ tsp coconut oil or unsalted butter
Colorful candy for decorating, to taste
Instructions
- In a food processor, blend ½ cup of Medjool dates, ¼ cup almond butter, 2 tbsp maple syrup, 2 tbsp unsweetened milk or plant-based drink, ½ tsp vanilla extract, and ¼ tsp salt until smooth.
- Transfer the mixture to a bowl. Add 1 cup almond flour and ½ cup vanilla protein powder. If the dough is too wet, add more almond flour. Use your hands to mix until you form a firm dough.
- Shape into 14 to 15 balls.
- In a small bowl, melt ⅓ cup white chocolate chips with ½ tsp coconut oil or unsalted butter in the microwave for 30 seconds. Stir and continue microwaving until the chocolate is completely melted.
- Dip each ball halfway into the melted white chocolate, then decorate with colorful candies.
- Place in the freezer for 15 minutes. Store in the fridge in an airtight container.
