Brussels Sprouts Pizza with Caramelized Onions

Brussels Sprouts Pizza with Caramelized Onions

This brussels sprouts pizza is simple to make and tastes amazing! It features a homemade cheesy bechamel sauce, sweet caramelized onions, melted cheese and lemon zest. 

Ingredients

  • 1 big yellow onion or 2 smalls, finely sliced

  • 4 tbsp of olive oil

  • 2 tbsp of white all-purpose flour

  • 1 cup of unsweetened plant-based beverage or lactose free milk

  • One pinch of ground nutmeg

  • 1 garlic clove, minced

  • 1 ½ cup of Saputo’s Lactose Free Mozzarellissima cheese, shredded

  • 1 pizza dough, homemade or store-bought*

  • 250g-300g of brussels sprouts, finely sliced*

  • Lemon zest to garnish

Instructions

  • Prepare the caramelized onions. In a big pan over medium-low heat, sauté the sliced onion with 2 tbsp of olive oil and a pinch of salt. Cook for about 20-25 minutes, until golden brown. Set aside.
  • In the same pan, prepare the cheese sauce. Add 2 tbsp of olive oil with the flour on medium heat. Mix well and cook for about 2 minutes. When a paste starts to form, pour the milk gradually while whisking constantly. Bring to a boil. When the sauce starts to thicken, remove from the heat and add the nutmeg, the minced garlic and ½ cup of shredded cheese. Mix well and season to taste. Add more milk if needed, depending on the consistency.
  • Preheat the oven to 450 F and place the grill in the middle.
  • Assemble the pizza. Roll out the pizza dough onto a big baking pan or pizza stone. Spread the cheese sauce on top of the pizza. Add the caramelized onions and the sliced brussels sprouts. Garnish with 1 cup of shredded cheese and season well.
  • Cook for about 15 minutes, or until the crust is golden.
  • Garnish with lemon zest.

Notes

  • You can make it on naan breads for a quick dinner option.
  • Sliced brussels sprouts: start by cutting the base of each brussel sprout. Finely slice lengthwise.
