Buffalo Cauliflower Tacos with Ranch Sauce

How to Make Cauliflower Tacos?

  1. First, prepare the batter by simply mixing all purpose flour (or gluten-free), plant based milk and spices. Toss the florets in the batter and dispose of on a baking pan.
  2. Cook in the oven for 20 minutes.
  3. Prepare the buffalo sauce by mixing spicy sauce, maple syrup and (vegan) butter.  Toss the cooked florets into the buffalo sauce.
  4. Cook for 10 more minutes.
  5. Serve on tortillas and drizzle a good amount of ranch sauce.

Buffalo Cauliflower Tacos – Recipe Variations

  • Buffalo sauce: if you’re not a fan of spicy food, you can swap the sauce for BBQ sauce or teriyaki sauce. Make sure you don’t add maple syrup, since this kind of sauce is already sweetened.
  • Replace the all purpose flour for the batter with gluten free flour.
  • Ranch sauce: you can use store bought instead or prepare with plain yogurt instead of cashews.
  • Garnishes: add some shredded cabbage and mango salsa.
  • Serve the remaining cauliflower wings on a salad instead of tacos.

Conservation

The cauliflower wings will taste better when served immediately. If you keep them in the fridge, the texture might be less crispy (but it’s still delicious!). I recommend you reheat them for a couple of minutes in the oven or airfryer. 

How to Heat Corn Tortillas for Tacos?

  • In a saucepan at medium heat, cook them for 15-30 seconds on each side.
  • Cover in aluminum foil and bake in the oven for 5-10 minutes.

Ingredients

  • Cauliflower wings
  • 1 medium cauliflower, cut into florets

  • 1 ¼ cup of unsweetened plant based milk (or cow milk)

  • 1 cup of all purpose flour (or gluten-free flour)

  • ½ tsp of salt

  • ½ tsp of paprika

  • ½ tsp of onion powder

  • ⅓ cup of buffalo sauce (Frank’s red hot)

  • 1 tbsp maple syrup

  • 2 tbsp of melted vegan butter or regular butter

  • Ranch Sauce
  • 1 cup of raw cashew nuts (soaked)*

  • 1 cup of water

  • 1 tbsp of apple cider vinegar

  • 1 tsp of onion powder

  • ½ tsp of garlic powder

  • ½ tsp of salt

  • 1 tbsp of shredded chives (optional)

  • Corn tortillas
  • Garnishes: sliced avocados and boston lettuce

Instructions

  • Preheat the oven to 425F and place the grill in the middle. Place a parchment paper on a big baking pan.
  • In a big bowl, mix the milk, the flour, ½ tsp of salt, ½ tsp of paprika and ½ tsp of onion powder. Mix well. Dip each cauliflower floret in the batter and place on the baking pan. Cook for 20 minutes, turning halfway through.
  • In another bowl, combine the buffalo sauce, the maple syrup and butter. Add the cooked cauliflower florets to the sauce and mix well. Place back the cauliflower florets on the baking pan and cook for another 10 minutes.
  • Prepare the ranch sauce. In a food processor or blender, combine all the ingredients for the sauce, except the chives. Blend until you get a creamy texture. Add the shredded chives and mix.
  • Heat the corn tortillas. Assemble the tacos with boston lettuce, sliced avocados, cauliflower wings and ranch sauce.

Notes

  • How to soak cashew nuts?
    1- Soak overnight. Simply add them to a small bowl and cover with water. Leave it at room temperature for at least 8 hours. Remove the cashews from the water.
    or
    2- Soak for 45 minutes in boiling water. Bring a small pot of water to boil. Remove from the heat. Add the cashews, cover with a lid and let it sit for 45 minutes to 1 hour. Remove the cashews from the water.
  •  How to heat corn tortillas?
