Chai Spiced Pear Muffins

minutesThese pear muffins will become your favorite fall snack! They’re super moist, plus they’re packed with chai spices.
Ingredients
- Dry ingredients
1 ¾ cups of white all purpose flour
½ cup of whole wheat flour (or swap for all purpose flour instead)
2 tsp of ground cinnamon
½ tsp of ground ginger
½ tsp of ground cardamom
½ tsp of allspice
2 tsp of baking powder
½ tsp of baking soda
½ tsp of salt
- Wet ingredients
3 ripe pears
2 big eggs
½ cup of avocado oil or vegetable oil
⅓ cup of maple syrup
⅓ cup of brown sugar
⅓ cup of plain greek yogurt
⅓ cup of milk of choice (cow milk or plant-based)
1 ½ tsp of vanilla extract
- Crumble
⅓ cup of white all purpose flour
3 tbsp of brown sugar
3 tbsp of cold unsalted butter
Instructions
- Preheat the oven to 375F and place the grill in the middle. Line 12 standard-size muffin cups with paper liners.
- In a bowl, mix the dry ingredients together. Set aside.
- With a cheese grater, grate 1 pear. Cut the 2 other pears into cubes. Set aside
- In a big bowl, mix the wet ingredients together. First, whisk the eggs with the oil. Then mix the maple syrup, brown sugar, yogurt, milk and vanilla extract. Add the grated pear and mix again.
- Mix the dry ingredients into the wet ingredients. Fold the pear cubes into the batter.
- Divide batter evenly into 12 muffin cups.
- Prepare the crumble. Mix the flour and brown sugar. With your hands, incorporate the cold butter until you get a texture similar to sand.
- Divide the crumble on top of each muffin.
- Bake for 20-24 minutes, or until a toothpick comes out clean. Let them cool for 5 minutes and place into a baking rack to cool down completely.
Notes
- There’s no need to peel the pears.
