- Fresh corn: corn on the cob is simply the best and that is why we’ll use it as the base of our recipe.
- Strong cheddar: for cheesy fritters.
- Egg: to hold the batter together.
- Green onion & fresh coriander: for freshness.
- Spices: a mix of onion powder and paprika.
- Baking powder: to help the fritters rise.
- Flour: we’re using all purpose flour.
- Milk: choose cow milk or unsweetened plant based beverage
- Coriander sauce: made with plain greek yogourt, fresh coriander, garlic and lime juice. You can also serve the fritters with plain greek yogurt or sour cream if you’re in a hurry.
How to Cook Corn Fritters?
First, we combine all the ingredients together to create a batter. To cook the fritters, add 2 tablespoons of the batter on a high heat pan with oil. Cook fritters for about 2-3 minutes each side. Make sure you’re using enough oil and a spatula to flip the fritters.
Tips to Perfect This Recipe
- Use a decent amount of vegetable oil while cooking the fritters.
- Cook the fritters into 2 batches to avoid the fritters sticking together.
- Place the cooked fritters on a paper towel to remove any oil excess.
- Sprinkle sea salt on the fritters while they are still hot.

How to cut corn off the cob?
Place the tip of the corn on a plate or a big bowl. Using a sharp knife, cut in a downward motion, letting the corn cobs kernels collect neatly into the plate.
Can corn fritters be frozen?
Yes! Make sure they have completely cooled down and place unto a baking pan. Put in the freezer for an hour to set and avoid them sticking together. Transfer to an airtight container for up to 2 months.
Are corn fritters gluten-free?
We’re adding ½ cup of all purpose flour to the batter but feel free to swap for gluten-free flour.
How to reheat corn fritters?
I recommend reheating in a pan with a little bit of oil for a few minutes for the best texture. You can also grill in the oven, but I don’t recommend you microwave since it will be soggy.
Can you prepare the batter in advance?
Certainly, you can leave it in the fridge for up to 4 hours before cooking.

Ingredients
- Corn fritters
2 1/2 cups of fresh corn (about 4 corn on the cob)
½ cup of shredded strong cheddar cheese
1 egg
1 sliced green onion
1 tsp of paprika
¼ tsp of onion powder
2 tbsp of fresh chopped coriander
½ tsp of salt
½ tsp baking powder
½ cup of all purpose flour
¼ cup of milk
Vegetable oil or avocado oil(for cooking)
- Coriander sauce
3 cups of fresh coriander (1 bunch of coriander)
1 cup of plain greek yogurt
1 garlic clove, minced
Juice of ½ lime
Instructions
- In a large bowl, combine fresh corn, cheddar, egg, green onion, paprika, onion powder, fresh coriander and salt. Mix well. Add baking powder and flour. Mix again. Add milk and combine.
- Prepare the coriander sauce. Add all the ingredients to a food processor and season well. Blend for a few minutes and scrape the edges with a spatula a few times. We want to get a creamy green sauce.
- In a large pan on medium high heat, add a decent amount of vegetable oil (about ¼ – ½ inch width). When the oil is hot, use an ice cream spoon or regular spoon and form 5 fritters in the pan (half of the batter). Cook each side of the fritter for 2 minutes. Remove from the pan and transfer to a plate with a paper towel. Sprinkle sea salt on each fritter while they are still hot. Repeat the cooking process with the rest of the batter (to create 5 more fritters).
- Serve the fritters with the coriander sauce.
