The best fish burger I’ve ever had! The fish is crispy with a panko crust and served with homemade tartar sauce.

Ingredients

  • Fish
  • 4 white fish filets, such as cod or hake (400-500g)

  • ¼ cup all-purpose flour

  • 2 eggs

  • 1 tsp hot sauce

  • ¾ cup panko breadcrumbs

  • 1 tsp smoked paprika

  • ½ tsp onion powder

  • ½ tsp salt

  • Neutral oil for cooking (such as vegetable oil)

  • Tartar Sauce
  • ½ cup mayonnaise

  • ½ cup plain Greek yogurt

  • ¼ cup Toundra Nordic relish

  • Juice of ½ lemon

  • 1 clove garlic, finely chopped

  • 1 tbsp finely sliced fresh dill

  • ¼ tsp salt

  • To assemble
  • Marinated radishes (optional, see notes)

  • Toundra mini cucumbers, sliced into ribbons

  • 4 burger buns

  • Romaine lettuce leaves

Instructions

  • Prepare the fish. Pat dry the filets with paper towels to remove excess water. Season well.
  • Prepare 3 shallow bowls. In the 1st bowl, place ¼ cup all-purpose flour. In the 2nd bowl, whisk the eggs and mix in some hot sauce (1 tsp). In the 3rd bowl, combine ¾ cup panko breadcrumbs, 1 tsp smoked paprika, ½ tsp onion powder, and ½ tsp salt.
  • Dip each fish filet in the flour, then in the egg mixture, and then in the panko mixture. Make sure to coat the fish thoroughly.
  • Prepare the tartar sauce by combining all ingredients in a bowl: ½ cup mayonnaise, ½ cup plain Greek yogurt, ¼ cup Toundra Nordic relish, juice of ½ lemon, 1 clove chopped garlic, 1 tbsp sliced dill, and ¼ tsp salt.
  • In a large stainless steel or non-stick skillet, add a generous drizzle of oil to cover the bottom of the pan.
  • When hot, add the fish filets and cook for about 4 minutes on each side.
  • Toast the burger buns.
  • Assemble the burgers by spreading tartar sauce on both buns. Add cucumber ribbons and place the fish filets. Top with marinated radishes and lettuce slices.

Notes

  • To prepare the marinated radishes, combine all ingredients together. This step can be prepared in advance (a few hours ahead or the day before):

    4 radishes, thinly sliced
    3 tbsp apple cider vinegar
    3 tbsp boiling water
    1 tbsp sugar
    ½ tsp salt
  • You can find Toundra relish in main grocery stores in the refrigerated section or non-refrigerated.
