Crostini with Mushrooms, Balsamic and Honey

minutesHere’s a simple and delicious recipe for mushroom lovers… or to convince those who aren’t quite sold yet! The mushrooms cook in a balsamic vinegar and honey mixture, then are served on crispy bread with a bit of mascarpone.
Ingredients
1 (325g) baguette
3 tbsp olive oil, divided
1 package (275g/ 1 ½ cup) of mascarpone cheese, room temperature
1 tsp salt
3 garlic cloves, minced
2 packages (454g/16 oz) cremini mushrooms, chopped or quartered (or a mix of mushrooms)
¼ cup balsamic vinegar
1 tbsp honey
2 tsp fresh thyme, chopped
To assemble : 2 tbsp chopped thyme, freshly cracked pepper and a drizzle of honey
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Slice the baguette on a diagonal into ½ inch thick slices. Brush both sides of each slice with about 2 tablespoons of olive oil. Bake for 10 minutes, or until golden and set aside.
- In a bowl, mix together mascarpone, 1 garlic clove minced and ½ tsp salt. Set aside.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the mushrooms and cook for 3-5 minutes without stirring until one side starts to brown. Stir and cook for another 3-5 minutes until the mushrooms are browned on all sides. Stir in ½ tsp salt.
- In a small bowl, whisk together ¼ cup balsamic vinegar, 1 tbsp honey, 2 garlic cloves minced and 2 tsp of chopped fresh thyme. Add the sauce to the mushrooms and cook for another 2-3 minutes, until the sauce has reduced and the mushrooms are well coated.
- To assemble the crostini, spread about 1 tablespoon of the mascarpone mixture onto each slice of toasted baguette. Add about 1-2 teaspoons of the mushrooms. Sprinkle some chopped thyme, freshly ground pepper and drizzle of honey.
