Feta Dip with Cucumbers and Sumac

Ingredients
- Topping
2 mini Toundra cucumbers, finely diced
2 tbsp chopped mint
2 tbsp chopped dill
1 ½ tsp sumac (and a bit more for garnish)
Juice of ½ lemon
2 tbsp olive oil
Fleur de sel
- Whipped Feta
1 block (200g) feta
½ cup plain Greek yogurt
2 tbsp olive oil
To Serve:
- Homemade or store-bought pita chips
Instructions
- Prepare the topping: In a bowl, combine 2 mini cucumbers (finely diced), 2 tbsp chopped mint, 2 tbsp chopped dill, 1 ½ tsp sumac, juice of ½ lemon, and 2 tbsp olive oil. Lightly season with fleur de sel. Mix well.
- Prepare the Whipped Feta: In a food processor, crumble the 200g block of feta with your fingers. Add ½ cup plain Greek yogurt and 2 tbsp olive oil. Pulse for 3-4 minutes until the feta is smooth and free of lumps.
- Assemble the Dish: Spread the whipped feta on the bottom of a plate. Top with the cucumber mixture. Garnish with a bit more sumac and a drizzle of olive oil. Serve with pita chips.
