This dip is perfect for summer: crunchy cucumbers with sumac and herbs, all served on whipped feta!

Ingredients

  • Topping
  • 2 mini Toundra cucumbers, finely diced

  • 2 tbsp chopped mint

  • 2 tbsp chopped dill

  • 1 ½ tsp sumac (and a bit more for garnish)

  • Juice of ½ lemon

  • 2 tbsp olive oil

  • Fleur de sel

  • Whipped Feta
  • 1 block (200g) feta

  • ½ cup plain Greek yogurt

  • 2 tbsp olive oil

  • To Serve:

  • Homemade or store-bought pita chips

Instructions

  • Prepare the topping: In a bowl, combine 2 mini cucumbers (finely diced), 2 tbsp chopped mint, 2 tbsp chopped dill, 1 ½ tsp sumac, juice of ½ lemon, and 2 tbsp olive oil. Lightly season with fleur de sel. Mix well.
  • Prepare the Whipped Feta: In a food processor, crumble the 200g block of feta with your fingers. Add ½ cup plain Greek yogurt and 2 tbsp olive oil. Pulse for 3-4 minutes until the feta is smooth and free of lumps.
  • Assemble the Dish: Spread the whipped feta on the bottom of a plate. Top with the cucumber mixture. Garnish with a bit more sumac and a drizzle of olive oil. Serve with pita chips.
