- Sugar: we’ll be using white sugar and brown sugar for the cookie batter as well as powdered sugar as the topping.
- Flour: white all-purpose flour.

- Use an electric mixer or stand mixer. This way, it will be easier to incorporate the eggs with the sugar.
- Make sure you let the cookie dough rest in the fridge for 30 minutes. This will help with the texture and shaping the dough into balls.
- Roll each ball into powdered sugar. Place the powdered sugar in a small plate or bowl. I suggest you 3-4 balls at the time and dip each one in the sugar before baking.
Conservation
Simply place in an airtight container on the counter at room temperature for up to 3 days. Sprinkle more powdered sugar on the cookies if needed.

This recipe was developed using a 70% dark chocolate baking bar cut into chunks. You can also use chocolate chips, but make sure you choose quality chocolate since it’s the base of the cookies.

Ingredients
6oz/170g of 70% dark chocolate*, cut into chunks (+/- 1 ¼ cup)
⅓ cup of unsalted butter
2 eggs, room temperature
½ cup of white sugar
¼ cup of brown sugar
2 tsp of vanilla extract
1 ¼ cup of white all purpose flour
1 tsp of baking powder
¼ tsp of salt
To garnish: ½ cup of powdered sugar
Instructions
- In a small bowl, melt the chocolate with butter. Simply microwave for 20-30 seconds, mix and repeat until the chocolate is melted. You can also melt the chocolate into a small saucepan over low heat.
- In a big bowl using an electric mixer, whisk the eggs with the white sugar, brown sugar and vanilla extract for about 2 minutes. Pour the melted chocolate and whisk again until you get a homogeneous texture.
- Mix the flour with baking powder and salt in a small bowl. With a spatula, incorporate the flour mixture to the wet ingredients. Place the cookie dough in the fridge for 30 minutes to set.
- Preheat the oven to 350F and place the grill in the middle. Place parchment paper into a big baking pan. Add powdered sugar into a small plate or bowl.
- Using your hands, roll the dough into 16-18 small balls. Dip each ball into powdered sugar and make sure they are well coated. Place them on the baking pan, leaving space between them and do not flatten the balls, leave them as they are.
- Cook for 10-11 minutes. Let it cool down completely.
