You’re going to love this gemelli sausage recipe for an easy weeknight dinner that requires just a few ingredients!

Ingredients

  • 1 package (340g) of Barilla’s Gemelli pasta

  • 454g of mild Italian sausage (the meat)

  • 1 tbsp olive oil

  • 2 shallots, chopped

  • 2-3 garlic cloves, chopped

  • ½ tsp crushed red pepper flakes

  • 350g-375g (about 4 cups) Brussels sprouts, thinly sliced

  • Zest of 1 lemon

  • Juice of ½ lemon

  • ¾ cup grated Parmigiano Reggiano cheese, plus more for serving

Instructions

  • Cook the pasta according to the package directions, but for 1 minute less.
  • In a large pan over medium heat, sauté the sausage meat for about 5 minutes until fully cooked. Season and set aside on a plate.
  • In the same pan, add olive oil, shallots, garlic, and red pepper flakes. Season with salt and sauté for 2-3 minutes. Add the sliced Brussels sprouts and cook for 5 minutes, until fully cooked.
  • Transfer the cooked pasta directly from the cooking water to the pan, reserving ¼ cup of pasta cooking water. Add the cooked sausage, lemon zest, lemon juice, and grated Parmesan. Season generously with salt.
  • Cook for 1 more minute, adding a bit of the reserved pasta water if needed.
  • Serve in bowls, topped with extra grated Parmesan and freshly ground pepper.
