Gemelli with Sausage, Lemon, and Brussels Sprouts

Ingredients
1 package (340g) of Barilla’s Gemelli pasta
454g of mild Italian sausage (the meat)
1 tbsp olive oil
2 shallots, chopped
2-3 garlic cloves, chopped
½ tsp crushed red pepper flakes
350g-375g (about 4 cups) Brussels sprouts, thinly sliced
Zest of 1 lemon
Juice of ½ lemon
¾ cup grated Parmigiano Reggiano cheese, plus more for serving
Instructions
- Cook the pasta according to the package directions, but for 1 minute less.
- In a large pan over medium heat, sauté the sausage meat for about 5 minutes until fully cooked. Season and set aside on a plate.
- In the same pan, add olive oil, shallots, garlic, and red pepper flakes. Season with salt and sauté for 2-3 minutes. Add the sliced Brussels sprouts and cook for 5 minutes, until fully cooked.
- Transfer the cooked pasta directly from the cooking water to the pan, reserving ¼ cup of pasta cooking water. Add the cooked sausage, lemon zest, lemon juice, and grated Parmesan. Season generously with salt.
- Cook for 1 more minute, adding a bit of the reserved pasta water if needed.
- Serve in bowls, topped with extra grated Parmesan and freshly ground pepper.
