Goat Cheese, Fig and Rosemary Honey Bites

minutesHere’s a festive appetizer : creamy goat cheese spread, juicy figs, and rosemary-infused honey, all served on brioche bread!
Ingredients
2 packages of goat cheese (113 g each)
⅓ cup plain Greek yogurt
1 clove garlic, minced
4 tbsp olive oil
½ cup honey
3 sprigs fresh rosemary, plus more for garnish
About 12 slices of brioche bread
6-7 fresh figs
Flaky sea salt, to taste
Pepper, to taste
Instructions
- In a food processor, make the goat cheese spread by combining the goat cheese, Greek yogurt, garlic, 2 tbsp olive oil, and ½ tsp salt. Pulse for 2-3 minutes until smooth. Set aside.
- In a small saucepan, add the honey and rosemary sprigs. Simmer on low heat for 10 minutes to infuse the honey, being careful not to let it caramelize (ensure the heat is low). Remove the rosemary sprigs.
- Using a 2-inch round cutter or bottle cap, cut out 24-28 rounds from the brioche slices.
- In a skillet over medium heat, add 2 tbsp olive oil and toast the brioche rounds for 2-3 minutes on each side. Set aside.
- Slice each fig in half lengthwise, then cut each half into 3 pieces to get 6 pieces per fig.
- Assemble the bites by spreading a little goat cheese mixture on each toasted brioche, adding a piece of fig and drizzling with rosemary-infused honey. Season with flaky sea salt and pepper to taste. Garnish with chopped rosemary.

You can prepare the goat cheese spread, honey, and toasted brioche in advance. Just assemble the bites when ready to serve.
– For the goat cheese spread, store in the fridge and let it come to room temperature 30 minutes before assembling the bites.
– Store the toasted brioche and honey at room temperature.
– If the honey thickens, reheat briefly in the microwave.
