Healthy Matcha Waffles Nutritious Ingredients:
- Matcha: we use good quality matcha powder.
- Banana puree: 1 banana for our waffle batter.
- Oat flour: we put rolled oats or quick oats in a blender to get oat flour.
- All-purpose flour: to get that perfect texture with the oat flour.
- Vanilla: we use vanilla extract.
- Milk: you can either use cow milk or plant-based milk.
- Eggs: you can use flax eggs instead for a vegan option.
- Maple syrup: there are no waffles without maple syrup.
- Yogurt: plain or vanilla Greek yogurt.
- Raspberries: to make an interesting contrast of colours with the green of the matcha.
- Flaked almonds: for a crunch.
How to Store and Reheat Waffles?
- Keep the cooked waffles in the fridge for 2–3 days. You can reheat them in the microwave or toaster.
- Freeze them: make sure they’re completely cooled down before freezing them. They will last for up to 3 months.
- To defrost them: Remove from the freezer and put them directly in the oven at 350-degree C. for 10–15 minutes.

Ingredients
All purpose flour : 1 cup
Oats : 1 cup of rolled or quick oats
Baking powder : 2 tsp
Matcha powder : 2 tbsp
Salt : ½ tsp
Banana : 1 ripe banana, mashed
Eggs : 2 eggs (you can substitute for flax eggs for a vegan option)
Maple Syrup : ⅓ cup
Vanilla : 1 tsp
Coconut oil or unsalted butter : 2 tbsp, melted
Milk : 1 ½ cup of cow milk or plant based milk
Toppings : raspberries, flaked almonds, greek yogurt (plain or vanilla) & maple syrup
Instructions
- Prepare oat flour. Blend oats for about 15 seconds to get oat flour.
- In a bowl, combine dry ingredients : all purpose flour, oat flour, baking powder, matcha powder and salt.
- In a big bowl, combine wet ingredients : banana puree, eggs, maple syrup, vanilla, coconut oil (or butter) and milk.
- Combine dry ingredients to the wet ingredients. Mix well.
- Preheat the waffle iron and grease it with cooking spray. Use ¼ of waffle batter at the time. Repeat 4 times to get 4 waffles.
- Serve with raspberries, flaked almonds, greek yogurt and maple syrup.
