This pear raspberry cobbler is a comforting and flavorful dessert. With its golden, fluffy crust, it’s the perfect treat to enjoy warm, topped with a scoop of vanilla ice cream!

Ingredients

  • Pear and Raspberry Filling
  • 4-5 pears, sliced (with skin)

  • 1 container of raspberries (170g)

  • ¼ cup unsalted butter, melted

  • 2 tablespoons granulated sugar

  • 1 ½ tablespoons cornstarch

  • 1 teaspoon vanilla extract

  • Zest of ½ lemon

  • Dough
  • 1 ½ cups all-purpose flour

  • ¾ cup granulated sugar

  • 2 teaspoons baking powder

  • ½ teaspoon salt

  • 1 cup milk

  • ½ cup unsalted butter, melted

  • 2 teaspoons vanilla extract

  • Turbinado sugar, for decoration (optional)

  • To Serve
  • Vanilla ice cream

Instructions

  • Preheat the oven to 375°F and place the rack in the middle.
  • Prepare the pear and raspberry filling. In a large 9×13-inch baking dish, add the sliced pears, the container of raspberries, ¼ cup melted unsalted butter, the zest of ½ lemon, 1 teaspoon vanilla extract, and 2 tablespoons granulated sugar. Mix with your hands.
  • In a large bowl, prepare the dough. Combine the flour, sugar, baking powder, and salt. Pour in the milk, ½ cup melted unsalted butter, and 2 teaspoons vanilla extract. Mix until well combined.
  • Pour the mixture evenly over the fruit. Sprinkle with turbinado sugar (optional).
  • Bake for 50-55 minutes, until the top is golden. Let cool for 15-20 minutes. Serve warm with ice cream.
