Red Bean Burger with Chipotle Sauce

Red Bean Burger Patties Ingredient List

  • Red Kidney beans: this is the base of the patties. Mash with a potato masher to create a sticky texture.
  • Red onion: that we cook in a pan with olive oil and minced garlic.  
  • Cooked brown rice: make sure the rice cooled down before making the patties.
  • Panko: for a soft texture.
  • Egg: helps with the stickiness. 
  • Tomato paste: to add some sweetness.
  • Spices: chili powder, cumin, paprika and coriander.
  • Chipotle sauce: a mix of mayo, plain greek yogurt, chipotle chilis and lime juice. 

For a Vegan Burger:

  • Swap the egg for a flax egg. Combine 1 tbsp of ground flax seeds with 3 tbsp of water. Let it sit for 15 minutes.
  • Swap the mayo and greek yogurt for vegan mayonnaise

Tips to Perfect this Recipe:

  • Make sure you rinse the red beans well before making the patties.
  • Cook the brown rice in advance preferably, you want to make sure it’s cooled down completely.
  • Drizzle olive oil on the patties before grilling.
  • Be generous with the chipotle sauce (it’s so good!).

This red bean burger is THE best veggie burger you’ll ever eat! The chipotle sauce adds such a nice taste to the burger. Easy to prepare and so satisfying!

Ingredients

  • Red Bean Patties
  • 1 can of red kidney beans, drained (540ml, 19oz)

  • 1 cup of cooked brown rice

  • ½ cup of panko

  • 1 egg

  • 2 tbsp of tomato paste

  • 1 tbsp of chili powder

  • 1 tbsp of smoked paprika powder

  • 2 tsp of cumin powder

  • 1 tsp of coriander powder (optional)

  • ½ red onion, diced

  • 3 garlic cloves, minced

  • Olive oil

  • Chipotle sauce
  • ½ cup of plain greek yogurt

  • ½ cup of mayo

  • 2 chipotle chilis (chipotle peppers in adobo sauce)

  • Juice of ½ lime

  • 5 burger buns and garnishes of choice (avocado, lettuce, cabbage, etc)

Instructions

  • In a non-stick pan over medium heat, add 1 tbsp of olive oil and sauté red onion and garlic for 5-10 minutes, until cooked through.
  • Prepare the chipotle sauce. Add the ingredients to a food processor and blend until you get a creamy texture. Transfer to a bowl and keep in the fridge.
  • Prepare the patties. Add the red beans to a big bowl and mash with a potato masher, leaving a few whole beans.
  • Add cooked red onions, cooked brown rice, panko, egg and tomato paste. Mix well. Add the spices and mix with your hands. Make sure the ingredients are well combined.
  • Form 5 patties and transfer to a plate. Brush patties with olive oil. Keep patties in the fridge until you’re ready to cook them.
  • Preheat the barbecue to 400F or heat up a non-stick pan. Cook the patties for 3-4 minutes on each side.
  • Spread chipotle sauce on each burger bun (be generous!) and add cooked patties. Garnish with your favorite toppings.

Notes

Freezer Friendly

I simply love to make a big batch of this recipe and freeze some patties. They will be a lifesaver for a busy night dinner! To do so, place the baked patties on a baking pan in the freezer for an hour. Transfer to a ziploc bag or airtight container and freeze for up to 3 months.
