This salmon filet recipe is easy to make and super flavourful. Fresh vinegar taste, the green olive salsa brings salmon to the next level, trust me!
How to Cook Salmon Filet?
You can cook salmon filets in different ways. I suggest oven-baked for an easy dinner. For enhanced flavors, pan seared or grilled on the BBQ are great options.
Make sure you season the salmon filets well and drizzle a good amount of olive oil before cooking.
- Oven-Baked: Cook salmon on a baking dish at 400F for 10-12 minutes.
- Pan-seared: Place the salmon fillets, skin on the bottom, in a large skillet over medium high heat. Cook for 5 minutes, or until a golden brown crust forms. Carefully flip the salmon and cook for an additional 5-6 minutes.
- BBQ: Place the salmon on the grill. Grill over medium heat for about 5 minutes per side. You can also place in folded aluminium paper and cook for about 10 minutes in total, until cooked through.
Green Olive Salsa Ingredients
- Green olives: choose pitted olives and roughly chop.
- Walnuts: for some crunch. You can also omit walnuts in this salsa.
- Fresh herbs: parsley & coriander will add freshness to the salsa.
- Garlic & green onion: 2 cloves of garlic and 1 green onion finely sliced.
- Lemon zest: make sure you only zest the skin of the lemon.
- Vinegar: for acidity, choose white balsamic vinegar or white wine vinegar.
- Olive oil: use quality virgin olive oil.
- Honey: to balance the acidity with sweetness.
Which Type of Olives to Use?
You can choose any type of olives for the salsa. Make sure you use non-stuffed pitted green olives or remove the pit yourself. Here are some varieties I like to use:
- Picholine: Small green olives from France, that you can find easily at the grocery store.
- Castelvetrano olives: Bright green olives from Sicily, they have a sweet taste.
Serve This Salmon Dinner with:
- Rice, quinoa or couscous.
- Simple mixed green salad.
- Your favorite roasted veggies, like asparagus or Brussel sprouts.
Conservation
The green olive salsa is best enjoyed fresh. If you do have leftovers, add extra olive oil to the salsa before consuming.
