There’s something so festive about fajitas — they’re colorful, flavorful, and they bring everyone together around the table. This sheet pan tofu dinner is perfect for a busy weeknight or a laid-back weekend when you just don’t feel like fussing over dinner. Plus, it’s seriously delicious!

Ingredients

  • Fajitas
  • 3 tsp chili powder

  • 1 tsp ground cumin

  • 1 tsp paprika

  • 1 tsp dried oregano

  • ½ tsp onion powder

  • ½ tsp garlic powder

  • ½ tsp salt

  • 3 bell peppers (ideally a mix of yellow, orange, and red), sliced

  • 1 yellow onion, sliced

  • 4 tbsp olive oil

  • 1 block extra-firm tofu (454g), pressed and sliced into sticks about ½ inch by 2 inches

  • 2 tbsp cornstarch

  • 2 tbsp soy sauce

  • To Serve
  • Tortillas

  • Sour cream

  • Salsa

  • Fresh cilantro

  • Lime wedges

Instructions

  • Preheat the oven to 400°F and position the rack in the middle. Line a large baking sheet with parchment paper.
  • In a small bowl, prepare the spice mix by combining 3 tsp chili powder, 1 tsp ground cumin, 1 tsp paprika, 1 tsp dried oregano, ½ tsp onion powder, ½ tsp garlic powder, and ½ tsp salt.
  • Spread the 3 sliced bell peppers and 1 sliced yellow onion onto the baking sheet. Drizzle with 2 tbsp olive oil and sprinkle with half of the spice mix. Toss to coat the vegetables evenly, and spread them out over half of the baking sheet.
  • In a large bowl, add the tofu sticks (1 block, 454g), 2 tbsp cornstarch, 2 tbsp soy sauce, and the remaining spice mix. Gently toss with your hands to coat the tofu well.
  • Arrange the tofu on the other half of the baking sheet, leaving a little space between each piece. Drizzle with 2 tbsp olive oil.
  • Bake for 30 minutes, making sure to stir the vegetables and flip the tofu sticks halfway through cooking.
  • Meanwhile, warm the tortillas either in a cast iron pan or in the microwave.
  • Serve the tofu and vegetable mixture in the warm tortillas. Top with sour cream, salsa, garnish with fresh cilantro, and squeeze over some lime juice.
