Instructions
- Preheat the oven to 400°F and position the rack in the middle. Line a large baking sheet with parchment paper.
- In a small bowl, prepare the spice mix by combining 3 tsp chili powder, 1 tsp ground cumin, 1 tsp paprika, 1 tsp dried oregano, ½ tsp onion powder, ½ tsp garlic powder, and ½ tsp salt.
- Spread the 3 sliced bell peppers and 1 sliced yellow onion onto the baking sheet. Drizzle with 2 tbsp olive oil and sprinkle with half of the spice mix. Toss to coat the vegetables evenly, and spread them out over half of the baking sheet.
- In a large bowl, add the tofu sticks (1 block, 454g), 2 tbsp cornstarch, 2 tbsp soy sauce, and the remaining spice mix. Gently toss with your hands to coat the tofu well.
- Arrange the tofu on the other half of the baking sheet, leaving a little space between each piece. Drizzle with 2 tbsp olive oil.
- Bake for 30 minutes, making sure to stir the vegetables and flip the tofu sticks halfway through cooking.
- Meanwhile, warm the tortillas either in a cast iron pan or in the microwave.
- Serve the tofu and vegetable mixture in the warm tortillas. Top with sour cream, salsa, garnish with fresh cilantro, and squeeze over some lime juice.
