These shrimp wontons are even better than the ones from the restaurant! You can either serve them with a sauce or in a vegetable soup. If you feel like it, double the recipe and freeze half of it to have it on hand for a busy weekday dinner!

Ingredients

  • 454g-500g of raw shrimp, peeled and defrosted

  • 1 piece of 1/2 inch ginger, grated

  • 2 green onions, thinly sliced

  • 1 tablespoon soy sauce

  • 1 tablespoon sesame oil

  • 1 tablespoon oyster sauce

  • 2 tablespoons cornstarch

  • 40-45 frozen wonton wrappers, thawed

Instructions

  • Prepare the shrimp filling. Cut each shrimp into small pieces, then finely chop with a knife, maintaining some texture and chunks.
  • Add the grated ginger (1/2 inch), thinly sliced 2 green onions, 1 tablespoon soy sauce, 1 tablespoon sesame oil, 1 tablespoon oyster sauce, and 1 tablespoon cornstarch. Mix well.
  • Prepare the wontons. Pour 1/4 cup of hot water with 1 tbsp of cornstarch into a small bowl and mix well. This will be the glue for the wontons.
  • Place a small amount of shrimp filling (1 heaping tsp) in the center of each wonton wrapper.
  • Dip your finger in the water/cornstarch and moisten the edges of the wonton wrapper.
  • Fold the wrapper in half to form a triangle, pressing the edges to seal the wonton with the water/cornstarch mixture. To give a nice shape, fold the corners of the triangle onto each other, sealing with water/cornstarch. Repeat with the remaining wontons.
  • Cook the wontons. Boil water in a large pot. Boil about 10 wontons at the time for 3 minutes, or until they float to the surface and are well-cooked. Remove from the water and repeat with the remaining wontons.
  • Serve with a sauce or in a soup (see notes).

Notes

  • Sauce: Serve them with a homemade sauce, chili oil, peanut sauce or spicy mayonnaise. To make a sauce with soy sauce combine: 4 tbsp of soy sauce, 2 tbsp of water, 1 tbsp of rice vinegar, 1 tbsp of maple syrup, 1-2 tsp of garlic chili sauce (or according to your preference), 1 tsp sesame oil, sesame seeds, and sliced green onions. Arrange the wontons on a plate and pour the sauce over them.
  • Soup: These wontons can be served in a soup with vegetables. Prepare a broth with 8 cups of chicken broth, 1 tablespoon soy sauce, 1 tablespoon fish sauce, and ½ tablespoon sesame oil. Cook your choice of vegetables into the broth. Cook your wontons in boiling water, transfer into a bowl and pour the soup over.
  • To freeze the wontons: Freeze the raw wontons (recipe up to step 5) and place them on a baking sheet in the freezer for 1-2 hours, then transfer them to an airtight bag. Store in the freezer for up to 3 months.
