The Ultimate Almond Butter Brownies (Double Chocolate)

These double chocolate almond butter brownies are so fluffy and rich! Made with almond butter, they are flourless (gluten-free) and the perfect dessert to bake. The brownie in itself is not that sweet so we suggest adding our homemade chocolate ganache to add a layer of chocolate heaven! It complements the brownie so well!

Almond Butter Brownies (Double Chocolate)

If you’ve ever tried my Almond Butter & Oats cookies recipe, they’ve inspired me to perfect these incredible brownies. 

Almond Butter Brownies Ingredients

  • Almond butter: use creamy almond butter with a runny texture. You can also make your own. Here is my recipe.
  • Eggs: will help the brownies rise.
  • Coconut sugar: it will act as our sweetener for this recipe. I like to use coconut sugar because of its subtle caramel flavor, but you can also use brown sugar.
  • Coconut oil: you’ll notice the batter mixture is pretty thick so we add melted coconut oil to dilute. You can also use melted butter or any neutral oil.
  • Cacao powder: there’s no brownies without chocolate! Use quality cacao powder for best results.
  • Salt & baking soda: baking soda will help the brownies rise and salt will balance the sweet flavor.
  • Vanilla extract: a touch of vanilla extract for flavor

Chocolate Ganache & Toppings

Chocolate ganache is normally made with melted chocolate and cream. Here, we prepare it with melted chocolate, milk, coconut oil and vanilla extract.

We also add rose petals for the presentation : I mean, look how pretty they are!!! But get creative friends and sprinkle what you have on hand. Here are some great options:

  • Cacao nibs
  • Extra cacao powder
  • Diced nuts (pecans, walnuts, sliced almonds)
  • Dried fruits like goji berries or diced apricots
  • Coconut flakes
  • Sea salt

Tips to Perfect This Recipe

  • Make sure to sift the sugar to avoid any lumps.
  • Use a toothpick to check if the brownies are fully cooked
  • Choose runny almond butter.
  • Use quality cacao powder.
  • Eggs and coconut oil should be at room temperature to avoid lumps in the coconut oil. You can also use neutral oil, such as vegetable oil.

Freezer-Friendly

These brownies are super addictive and while I’m pretty sure they won’t last very long, in the improbable case that you do have leftovers, they are freezer-friendly for up to 3 months. You can add the toppings once unfrozen.

These double chocolate almond butter brownies are so fluffy and rich. Our homemade chocolate ganache makes them so DECADENT and the perfect dessert to bake!

Ingredients

  • Brownies
  • 2 eggs, room temperature

  • ¼ + ⅛ cup of coconut oil melted (at room temperature) or any neutral oil (vegetable oil)

  • ½ tbsp vanilla extract

  • 3/4 cup creamy almond butter

  • 3/4 cup coconut sugar or brown sugar

  • ½ cup of cacao powder

  • 1/2 tsp baking soda

  • ⅛ tsp salt

  • Chocolate ganache
  • ½ cup of chocolate chips

  • 3 tbsp of milk of choice

  • 2 tbsp coconut oil or unsalted butter

  • ½ tsp vanilla extract

  • Toppings of your choice (optional)

Instructions

  • Preheat the oven to 325F.
  • Line an 8×8 inch pan with parchment paper
  • In a big bowl, mix the eggs, oil and vanilla extract. Next add the almond butter and sugar combine and mix again until smooth. Finish with the cacao powder, baking soda and salt. Mix well to combine. The batter will be thick.
  • Spread the mixture evenly into the pan and press well. You may need to use your hands.
  • Cook for 28-30 minutes. Use a toothpick to check if the brownies are cooked through.
  • Let it rest for 30 minutes.
  • Prepare the chocolate ganache. Combine all the ingredients to a small bowl and microwave for 30 seconds to 1 minute, until melted.
  • Poor the chocolate ganache over the brownies. Garnish with toppings of choice (optional). Place into the fridge to set for 30 minutes.
  • Cut into 12 squares and enjoy!
