Turmeric and Tuna Orzo Salad : the nourishing and colourful salad I can never get enough of!

Ingredients

  • 1 ½ cups orzo

  • 3 cups vegetable broth

  • 1 tsp turmeric powder

  • 1 head of broccoli

  • 1 can (340ml) roasted red peppers, diced (1 cup)

  • 2 shallots, sliced into half-moons

  • 2 cans (142g each) Clover Leaf tuna in olive oil

  • 1 container (125g) parmesan petals (1 ½ cups)

  • 3 handfuls arugula

  • 3 tbsp olive oil

  • Juice of ½ lemon

  • ½ tsp salt

  • Pepper to taste

Instructions

  • In a small pot, add the orzo, vegetable broth, and turmeric. Bring to a boil, reduce heat to low, and let it cook for about 10-12 minutes or until the orzo has completely absorbed the broth.
  • Allow the orzo to cool completely.
  • Thinly slice the broccoli head.
  • In a large bowl, combine the cooled orzo, sliced broccoli, roasted red peppers, shallots, tuna, parmesan petals, and arugula. Add the juice of ½ lemon, olive oil, and salt. Season with pepper to taste.
  • Mix well and adjust seasoning if needed.
