Vibrant Beet-Raspberry Smoothie

This vibrant beet raspberry smoothie has everything you wish for in a smoothie! It will give you that extra boost you need in the morning or to energize your day (I mean look at that colour!).

It includes beets, frozen raspberries, almond milk, maple syrup, ground flaxseed and fresh ginger. It’s not too sweet, but super refreshing and nutritious.

Beet Love

I simply love to put veggies in my smoothie and beets are a great addition. Even if you don’t like the taste of beets, I’m pretty sure you’re gonna fall in love with this amazing smoothie.

Plus, beets :

  • provide a great source of nutrients (folate, potassium, vitamin C).
  • are antioxidant.
  • are high in fiber to keep you full and satisfy.
  • may help lower blood pressure.
  • can stain your shirt ;).

Raw or Cooked beets?

I recommend using cooked beets for this recipe. 

One easy way to have cooked beets on hand is to buy vacuum sealed cooked beets. They are easy to find at the grocery store.

How to cook beets? You can also cook beets yourself. To do so, clean beets and add to a pot filled with water as well as a little lemon juice. Bring to a boil and simmer for about 45 minutes, until tender. Remove skin.

Using raw beets. You can also use it raw but you may have to adapt the recipe a little bit. Dice it finely before adding it to the blender.

Notes on the Ingredients List:

  • Almond milk: you can use any unsweetened plant-based beverage, seeing as we add maple syrup as a sweetener. I suggest using almond milk.
  • Frozen raspberries: use frozen for better texture. If you use unfrozen raspberries, add a couple of ice cubes to the blender.
  • Ground flaxseed: it’s totally optional but will add some healthy fats to your smoothie.
  • Maple syrup: it’s the sweetener. You can also use honey instead.

Ingredients

  • 3 small beets (cooked)

  • 1 cup of frozen raspberries

  • 1 tsp or 2 tsp grated fresh ginger (depending if you like it spicy)

  • 2 tbsp maple syrup

  • 1 ½ cup almond milk (unsweetened)

  • 2 tbsp of ground flaxseed (optional)

Instructions

  • Combine all the ingredients into a high speed blender.
  • Blend for 3-4 minutes, until you get a creamy texture. Add more almond milk, depending on the texture.
