Feta Watermelon Salad Ingredient List
- Whipped feta: Creamy feta that we make in a food processor along with plain greek yogurt, olive oil and garlic.
- Watermelon: use ripe watermelon and create balls with a melon baller if you can. You can also cut into cubes.
- Cucumbers: use Lebanese cucumbers (mini cucumbers) for their crunchiness.
- Fresh mint: you can substitute with fresh basil as well.
- Pistachios: roughly chopped. Feel free to use pine nuts or roasted hazelnuts if you prefer.
How to Make Whipped Feta?
- First, you’ll need a food processor. Roughly break the feta block with your hands and add it to the food processor. Add the other ingredients: plain greek yogurt, olive oil and minced garlic.
- Blend for a few minutes, scraping the edges with a spatula. Be patient, it will take 4-5 minutes.
- If the whipped feta is not creamy enough, add more greek yogurt and/or olive oil.
How to Make Watermelon Balls?
Watermelon balls are made with a melon baller. You can buy it online, this is the one I used in this recipe. It is really easy to use, you just have to scoop the watermelon. If you don’t have a melon baller, simply cut the watermelon into cubes.
Tips to Perfect this Recipe
- Use ripe watermelon for a sweeter taste.
- Make sure you blend the feta for at least 4-5 minutes to get a creamy texture.
- Garnish the salad with olive oil and sprinkle black pepper.
Conservation
Whipped feta will last up to 3 days in the fridge. You can add a tablespoon of plain greek yogurt to the dip if it’s too thick. For the salad, I recommend assembling it when you’re ready to eat. Keep the salad apart from the whipped feta in the fridge.

Ingredients
- Whipped feta
200g of feta cheese (regular feta)
5-6 tbsp of plain greek yogurt
3 tbsp of virgin olive oil
1 garlic clove, minced
- Salad
35-40 watermelon balls (or watermelon cubes)
2-3 Lebanese cucumbers, sliced
2-3 tbsp of fresh mint, chopped
2-3 tbsp of roughly chopped pistachios
Garnish with: virgin olive oil and black pepper
Instructions
- Prepare the whipped feta. Roughly break the feta block with your hands and add it to a food processor. Add the other ingredients: plain greek yogurt, olive oil and minced garlic. Blend for about 4-5 minutes, scraping the edges with a spatula every minute or so. If the whipped feta is not creamy enough, add more greek yogurt and/or olive oil.
- Spread the whipped feta evenly, to a large plate.
- Add watermelon balls and sliced cucumbers. Garnish with fresh mint and pistachios. Drizzle some olive oil and add black pepper.
