Caramelized Onion Puff Pastry Bites

Ingredients
2 tbsp of olive oil
3 medium-size yellow onions
1 tbsp of balsamic vinegar
¼ cup of butter, room temperature
1 puff pastry sheet, defrosted
½ cup of shredded sharp cheddar
½ tbsp of fresh rosemary, chopped
1 egg, bitten
Instructions
- Prepare the caramelized onions. In a big pan over medium low heat, sauté olive oil and onions. Add a big pinch of salt. Cook for about 30 minutes, stirring every now and then. You should get soft and golden brown onions. Add balsamic vinegar and mix for 1 minute. Set a side on a plate and let it cool down.
- Add the cooled onions to a food processor and blend until finely chopped. Add the butter and mix until you get a smooth texture.
- Roll the puff pastry with a pastry roll and a bit of flour in order to get a 10 inch per 13 inch rectangle.
- Spread the onion mixture on the puff pastry. Sprinkle the cheese and rosemary.
- Starting with the longer side (13 inch), roll the dough into a cylinder.
- Place in the fridge for 15 minutes. It will be easier to cut into pieces.
- Preheat the oven to 425F and place the grill in the middle. Butter a muffin pan with 12 cavities.
- Cut the cylinder into 12 equal pieces and place each bite into the muffin cavities.
- Cook for about 20 minutes, or until golden brown.
Notes
- To prepare the puff pastry bites in advance, follow steps 1 to 8. Cover with plastic wrap and keep the bites in the fridge until ready to bake.
