Here’s my favorite salmon burger that is perfect for summertime!

Ingredients

  • 4 burger buns

  • Olive oil

  • Salmon patties
  • 454g of fresh salmon, cut into 1 inch cubes

  • ⅔ cup of panko breadcrumbs

  • 1 egg

  • 1 shallot, cut into small cubes

  • 1 garlic clove, minced

  • ¼ cup of dill, chopped

  • 2 tbsp of capers

  • 1 tsp of dijon mustard

  • ½ tsp of salt

  • Zest of 1 lemon

  • Paprika mayo
  • ½ cup of homemade mayo or store bought

  • 1 ¼ tsp of smoked paprika

  • Cucumber salad
  • 2 mini cucumbers, cut into ribbons

  • Juice of ½ lemon

  • 2 tbsp of fresh dill, chopped

Instructions

  • Prepare the salmon patties. Add all the ingredients to a food processor and pulse a few times to mix together. You still want some texture (we’re not looking for a puree, it’s ok if you still have salmon pieces left!).
  • With your hands, form 4 patties and place on a plate in the fridge while you prepare the other ingredients.
  • Prepare the mayo by combining the ingredients together.
  • Prepare the salad by combining the ingredients together. Season well.
  • Preheat your BBQ to 400F or you can also use a pan on medium high heat. Drizzle olive oil on both sides of the salmon patties. Cook 3-4 minutes each side.
  • Cook the burger buns to your preference.
  • Assemble the burgers with the paprika mayo, salmon patties and cucumber salad.
