Halloumi Cheese Skewers with Herb Sauce

These skewers will be a hit alongside your summer grills! I love the sweet taste of grilled tomatoes with the salty halloumi, all accompanied by a super fresh herb sauce.

Ingredients

  • 1 block of halloumi cheese (200g)

  • +/- 36 cherry tomatoes (1 basket)

  • 1 zucchini

  • 2 tablespoons of fresh basil, chopped

  • 2 tablespoons of fresh parsley, chopped

  • 2 tablespoons of fresh oregano, chopped

  • Zest of ½ lemon

  • 1 garlic clove, minced

  • 4 tablespoons of olive oil

Instructions

  • Prepare the skewers. Cut the halloumi cheese into 1-inch cubes. Using a peeler, make ribbons with the zucchini.
  • Assemble each skewer with tomatoes, zucchini ribbons, and cheese pieces (alternating).
  • Prepare the herb sauce. In a small bowl, combine: 2 tablespoons of fresh basil, 2 tablespoons of fresh parsley, 2 tablespoons of fresh oregano, the zest of ½ lemon, 1 minced garlic clove, and 4 tablespoons of olive oil. Lightly salt.
  • Distribute the sauce over the skewers (reserving about 1 tablespoon for finishing) and incorporate with your hands. Let marinate until ready to cook.
  • Preheat the BBQ to 450°F. Cook the skewers for about 3 minutes on each side, making sure not to close the BBQ lid during cooking.
  • Place on a serving plate and garnish with the remaining herb sauce.
