Chaï Chia Pudding with Pear Compote

hoursThis chia pudding recipe will make you want to get up in the morning! It’s infused with chaï tea, topped with pear compote, and crunchy granola!
Ingredients
1 cup boiling water
3 chaï black tea bags
½ cup black chia seeds
1 cup of plant-based milk
1 teaspoon vanilla extract
3 tablespoons maple syrup
Pinch of salt
3 ripe pears, peeled and diced

Instructions
- Pour 1 cup of boiling water into a cup and add the 3 bags of chaï black tea. Let it infuse for 10 minutes. Remove the tea bags.
- In a large mason jar or airtight container, combine ½ cup of black chia seeds, 1 cup of milk, the infused chai tea, 1 teaspoon of vanilla extract, 2 tablespoons of maple syrup, and a pinch of salt.
- Place in the refrigerator for a minimum of 4 hours or overnight.
- Prepare the pear compote. In a small saucepan over medium-low heat, cook the 3 ripe pears (peeled and diced) with 1 tablespoon of maple syrup, ¼ cup of water and a pinch of salt. Cook for 20 minutes, or until the pears are tender and easily mashable with the back of a spoon. Blend with an immersion blender until smooth. Add more water if needed.
- When ready to serve, spoon the chia pudding into a bowl or a glass, top with pear compote and granola.
