This chia pudding recipe will make you want to get up in the morning! It’s infused with chaï tea, topped with pear compote, and crunchy granola!

Ingredients

  • 1 cup boiling water

  • 3 chaï black tea bags

  • ½ cup black chia seeds

  • 1 cup of plant-based milk

  • 1 teaspoon vanilla extract

  • 3 tablespoons maple syrup

  • Pinch of salt

  • 3 ripe pears, peeled and diced

Instructions

  • Pour 1 cup of boiling water into a cup and add the 3 bags of chaï black tea. Let it infuse for 10 minutes. Remove the tea bags.
  • In a large mason jar or airtight container, combine ½ cup of black chia seeds, 1 cup of milk, the infused chai tea, 1 teaspoon of vanilla extract, 2 tablespoons of maple syrup, and a pinch of salt.
  • Place in the refrigerator for a minimum of 4 hours or overnight.
  • Prepare the pear compote. In a small saucepan over medium-low heat, cook the 3 ripe pears (peeled and diced) with 1 tablespoon of maple syrup, ¼ cup of water and a pinch of salt. Cook for 20 minutes, or until the pears are tender and easily mashable with the back of a spoon. Blend with an immersion blender until smooth. Add more water if needed.
  • When ready to serve, spoon the chia pudding into a bowl or a glass, top with pear compote and granola.
