Coconut Chia Pudding (4-Ingredient!)

Here’s a super easy recipe to make coconut chia pudding at home. You only need 4 ingredients to get this super creamy pudding. Perfect to enjoy as a snack or for breakfast!

Ingredients for Coconut Chia Pudding

  1. Chia seeds: you can easily find them at the grocery store in the natural products section. You can also buy them online.
  2. Light coconut milk: it’s the liquid we’re using for the pudding. Make sure to choose light instead of regular. The regular one will be too thick, you’ll need to adjust the quantities.
  3. Maple syrup: as the sweetener but you can swap for honey as well.
  4. Vanilla extract.

What’s the Liquid Ratio?

Normally, the ratio for chia pudding is ¼ cup of chia seeds for 1 cup of milk. Here, we’re using a can of coconut milk (400ml), so the texture will be ticker – but creamier as well!

Why is Coconut Chia Pudding Healthy?

Chia seeds are loaded with omega 3 fatty acids and antioxidants. They’re high in fibers and packed with proteins. It helps to keep you full and can help with digestion. To make the pudding we’re using coconut milk and refined sugar free sweetener.

How to Serve it?

I love to serve mine with granola and raspberries. Here are other topping ideas:

  • Coconut flakes or shredded coconut
  • Greek yogurt or coconut yogurt
  • Fresh fruits of choice
  • Granola 
  • Nuts and seeds
  • Homemade fruit jam

How Long Does it Take for Chia Pudding to Set Up?

Keep it in the fridge for at least 2 hours. You can also prepare it the night before to enjoy the next morning.

How Long Can You Keep Chia Pudding?

Keep it in an airtight container or mason jar for up to 5 days. I don’t recommend freezing it.

Ingredients

  • ½ cup of chia seeds

  • 1 can of light coconut milk (400ml)*

  • 3 tbsp of maple syrup

  • 1 tsp of vanilla extract

Instructions

  • In a big bowl or mason jar, add all the ingredients.
  • Mix well to incorporate chia seeds with the liquid. You can also use a whisk if it helps.
  • Cover and place in the fridge for at least 2 hours.
  • Garnish with fresh fruits and your favorite toppings.

Notes

  • Make sure to use light coconut milk instead of regular. The regular coconut milk will be too thick.
  • You can also swap for any plant-based beverage (such as almond milk or oat milk). To do so use 1/2 cup of chia seeds for 2 cups of milk.
