Ingredient List
- Chickpeas: it’s the base of the sandwich. With a potato masher, we will roughly mash the chickpeas until most is smashed but there are still some chickpeas left. See photo below.
- Veggies: celery and shredded carrots for the texture.
- Curry powder: Indian flavors.
- Dates: choose Medjool dates.
- Mayonnaise: store-bought or homemade.
- Lemon juice: for the acidity.
How to Make a Chickpea Salad Sandwich?
This sandwich takes literally 5 minutes to make! The only preparation involved is to slice the celery, cut the shallot and shred the carrot. Mix that up with smashed chickpeas and the other ingredients and you’ll get a super flavourful sandwich!
Canned Chickpeas or Dry Chickpeas?
You have to make sure you use cooked chickpeas. I simply love canned chickpeas for a quick and easy option. You can also use dry chickpeas, but make sure you cook them beforehand.
Chickpea Salad Sandwich Conservation
This sandwich is a good meal prep option. You can easily prepare the filling in advance and store in the fridge in an airtight container for up to 3 days. This way, you’ll just need to assemble the sandwich for lunch.
Other Ways to Enjoy this Smashed Chickpea Salad
- On top of a salad with lettuce, cucumbers and tomatoes. Simply drizzle olive oil on top.
- In a wrap with other veggies.

Ingredients
- Smashed Chickpea Salad Filling
1 can of cooked chickpeas, rinsed and drained (540 ml/19oz)
1 shallot, cut into cubes
1 celery stick, cut into small cubes
⅓ cup of shredded carrots
4 Medjool dates cut into cubes (core removed)
2 tbsp of shredded fresh parsley (or herbs of choice)
2 tbsp of store-bought or homemade mayo (vegan option)
Juice of ½ lemon
1 tsp of curry powder
½ tsp of salt, pepper to taste
- Sandwich
Bread of choice
Mayonnaise or vegan mayo
Lettuce and/or veggies
Instructions
- Add the chickpeas to a big bowl. With a potato masher, roughly mash the chickpeas until most is smashed but there are still some chickpeas left.
- Add the other ingredients: shallot, celery, carrots, dates, parsley, mayo/vegan mayo, lemon juice, curry powder and salt/pepper. Mix well.
- Assemble the sandwich. Spread mayonnaise or vegan mayo on slices of bread (toast them!). Add the smashed chickpea salad on top. Finish with lettuce and/or veggies.
