Here’s an easy summer dessert to make: No-Bake kiwi tart! Made with nuts as the crust and a mascarpone filling, it’s an healthier dessert everyone will like.

Ingredients

  • For the crust
  • 1 cup of natural almonds

  • 1 cup of raw cashew nuts (unsalted)

  • 1 cup of Medjool dates, core removed

  • 1 tsp of vanilla extract

  • For the filling
  • 275g of mascarpone cheese, room temperature

  • 1/2 cup of sweetened condensed milk

  • 1 tsp of vanilla extract

  • Pinch of salt

  • For the topping
  • 6-7 kiwis (or any other fruit)

  • 3 tbsp of honey

  • Shredded coconut (optional)

Instructions

  • Combine all the ingredients for the crust in a food processor. Blend for about 1 minute, until you get a sticky texture.
  • Use a 9 inches non-stick removable tart pan. Press the mixture firmly into the pan to create a crust. Place in the freezer for 30 minutes.
  • Combine all the ingredients for the filling in a small bowl. Pour the filling on the crust and spread evenly.
  • Place the tart in the fridge for at least 4 hours.
  • Peal kiwis skin, cut in half and then slice.
  • Dispose kiwi slices on the tart. Drizzle with honey and sprinkle with shredded coconut.
  • Enjoy and keep in the fridge.
