Easy Pesto Tofu Spread

Ingredients for the Pesto Tofu Spread

  • Tofu: use extra firm tofu and make sure you remove any excess of water. To do so, simply roll the tofu block in a dish cloth or paper towel and place a heavy object on top. Let it sit for 15 minutes.
  • Pesto: we’re using Le Grand’s basil pesto.
  • Lemon: the zest of 1 lemon.
  • Mayo or veganaise: for its creaminess.
  • Dijon Mustard: optional

What Type of Tofu Variety Should I Use?

The silken tofu will be too liquid for this spread. I recommend using extra firm tofu or firm tofu for this recipe.

How to Make it?

  1. With your hands, shred the tofu into small bites and place it in the food processor. Blend for about 1 minute, until you get a creamy texture.
  2. Add all the other ingredients and blend for 10-20 seconds.
  3. Transfer to an airtight container and keep in the fridge.

Can I Use a Blender Instead?

It will depend on the brand. Another option will be to use a hand mixer.

Is the Tofu Spread Vegan?

If you make it with veganaise instead of mayo, you’ll get a vegan tofu spread. It’s also lactose free and does not contain eggs.

How to Serve it?

Conservation

Keep it in the fridge in an airtight container for 4 days. I don’t recommend to freeze the spread, the texture might change.
