How to Make an Avocado Boat?

Here’s a twist on avocado boat= grilled avocado boat! They scoop even more easily and bring such a nice flavour to this dish!

  1. Choose ripe avocados. It needs to be tender! This recipe won’t work if the avocados are still hard.
    1. Where to find ripe avocados? If the ones at the grocery store are not tender enough, go to the market. They often have ripe avocados there.
    2. How to ripen avocados? You only have hard avocados? Place them in a paper bag with a banana and let it sit for 2 days at room temperature.
  2. Slice in half with a sharp knife. Remove the core.
  3. Grill the avocados. Add olive oil to the skin and cook skin side down. You can either grill them on the BBQ or in a cast iron pan. It will take about 2 minutes to cook on a medium-high heat.
  4. Serve with toppings. Here, we’re using Swedish Shrimp.

Ranch Swedish Shrimp

Scandivian shrimp are small delicate shrimp that are often served on rye bread or in a salad. Here, we’re making it with a creamy yogurt ranch sauce. Here are the ingredients you’ll need:

  • Plain greek yogurt: for its creaminess. Choose 2% fat preferably. 
  • Fresh herbs: a mix of dill and chives.
  • Celery: finely chopped into cubes for crunchiness. 
  • Spices: a mix of onion powder and garlic powder to create the ranch taste we’re looking for! 
  • Lemon: for the acidity.

This avocado boat with ranch Swedish shrimp recipe is a healthy lunch or side dish. Creamy grilled avocado topped with a Swedish shrimp that we prepare with a ranch yogurt sauce. Easy, healthy, and ready in no time!

Ingredients

  • 4 ripe avocados

  • Olive oil to grill the avocados

  • 340g of unfrozen Swedish shrimp (small shrimp)

  • ¼ cup of 2% plain greek yogurt or mayo

  • 2 tbsp of fresh dill chopped

  • 2 tbsp of fresh chives chopped

  • 1 celery stalk, chopped into small cubes

  • Juice and zest of ½ lemon

  • 1 tsp of garlic powder

  • ½ tsp of onion powder

  • ¼ tsp of salt

  • Optional topping: crumbled croutons

Instructions

  • Prepare the Swedish shrimp. Add swedish shrimp, greek yogurt, dill, chives, celery, lemon, garlic powder, onion powder and salt to a small bowl. Mix well.
  • Cut the avocados in half. Remove the core. Drizzle each avocado with olive oil. Cook the avocados skin side down on a 400F BBQ grill or cast iron pan for about 2 minutes.
  • Top each avocado with the Swedish shrimp salad. Garnish with crumbled croutons.
