We recommend using red or purple plums for this recipe. You can also choose Italian plums. If plums are not your thing, feel free to swap them with any other fruit. Peaches will work great for this recipe.

How to Make the Dough for the Galette?

You can use store-bought dough if you want to make it easy. But, if you want to do it yourself it’s very easy and inexpensive. Here’s how:

  1. Mix flour, sugar and salt.
  2. Add diced butter: making sure it’s cold.
  3. Incorporate the butter into the dough with your hands.
  4. Finish with water and knead the dough.

Ingredients

  • For the dough (you can also use store-bought dough)
  • ¾ cup of all-purpose flour

  • ½ cup of almond grounded flour

  • 2 tbsp of white sugar

  • ½ tsp of salt

  • ½ cup of cold diced butter

  • 2-3 tbsp of water

  • For the plums filling
  • 6 sliced plums (red or purple)

  • ¼ cup of with sugar

  • 1 tbsp of cornstarch

  • 1 tsp of vanilla

  • ½ tsp of cinnamon

  • 1 pinch of salt

  • 1 egg

  • Vanilla ice cream to serve

Instructions

  • If you’re using store-bought dough, go to step 6.
  • Make the galette dough. In a bowl, combine flours, sugar and salt.
  • Add cold diced butter and make sure you press it well with your hands to incorporate it completely into the dough.
  • Add water and knead the dough to get a nice dough ball.
  • Cover with plastic wrap and place in the fridge for 30 minutes.
  • Preheat the oven at 375 degrees F.
  • Prepare the plums filling. In a bowl, combine plums, sugar, cornstarch, vanilla, cinnamon, sugar and salt. Mix well.
  • On a working surface, place some parchment paper and add some flour.
  • With a rolling pin, roll the dough on the parchment paper to get a 12-inch round about ⅛ thick. Put the rolled dough with the parchment paper on a baking tray.
  • Add the plums filling in the centre of the dough, leaving a 2-inch border around the edge. Fold the rim of the dough up and over the edge of the filling.
  • In a small bowl, beat the egg and brush the crust with the egg wash and sprinkle with sugar.
  • Cook for 50-55 minutes.
  • Let it rest and serve with vanilla ice cream.
