Mini Potato Bites with Sour Cream and Prosciutto

Looking for a festive appetizer? Try these mini potato bites! Roasted baby potatoes that are filled with sour cream, prosciutto and fresh chives. A super simple appetizer everyone will love!

Ingredients

  • 1.5Lb baby potatoes (approx. 30 potatoes)

  • ¼ cup of olive oil

  • 1 tsp of salt

  • 3-4 slices of prosciutto

  • ¾ cup of sour cream (14%)

  • Sea salt to taste

  • 3-4 tbsp of chopped fresh chives

Instructions

  • Preheat the oven to 375 F and place the grill in the middle.
  • Rince the baby potatoes under cold water and pat dry with a towel.
  • Add the baby potatoes to a big bowl. Drizzle with olive oil and add 1 tsp of salt. Mix well with your hands.
  • Spread the potatoes into a big baking pan with parchment paper. Cook for 30-35 minutes or until the potatoes are cooked through.
  • Prepare the prosciutto chips. Add parchment paper to another baking pan and place the prosciutto slices on it. Cook for 12-15 minutes, at the same time as the potatoes cook. Let them cool down completely. Using your fingers, crumble into small pieces.
  • With a knife, Cut a small wedge out of each potato. Place them on a big service plate. Fill with sour cream, sea salt to taste, prosciutto chips and chives.

Notes

  • This recipe yields 30-36 bites. I recommend serving 2-4 potatoes per person, depending on the other plates you’re having. You can also reduce the quantities in half to get less (15-18 bites instead).
  • You can serve these potato bites warm or at room temperature.
