Ingredients
4 burger buns
Olive oil
- Salmon patties
454g of fresh salmon, cut into 1 inch cubes
⅔ cup of panko breadcrumbs
1 egg
1 shallot, cut into small cubes
1 garlic clove, minced
¼ cup of dill, chopped
2 tbsp of capers
1 tsp of dijon mustard
½ tsp of salt
Zest of 1 lemon
- Paprika mayo
½ cup of homemade mayo or store bought
1 ¼ tsp of smoked paprika
- Cucumber salad
2 mini cucumbers, cut into ribbons
Juice of ½ lemon
2 tbsp of fresh dill, chopped
Instructions
- Prepare the salmon patties. Add all the ingredients to a food processor and pulse a few times to mix together. You still want some texture (we’re not looking for a puree, it’s ok if you still have salmon pieces left!).
- With your hands, form 4 patties and place on a plate in the fridge while you prepare the other ingredients.
- Prepare the mayo by combining the ingredients together.
- Prepare the salad by combining the ingredients together. Season well.
- Preheat your BBQ to 400F or you can also use a pan on medium high heat. Drizzle olive oil on both sides of the salmon patties. Cook 3-4 minutes each side.
- Cook the burger buns to your preference.
- Assemble the burgers with the paprika mayo, salmon patties and cucumber salad.
