These salmon croquettes are tender and crispy. They are served with a yogurt-based herb and lemon sauce. A fresh, simple to prepare, and tasty meal!

Ingredients

  • Salmon Croquettes
  • 1 salmon filet (700g)

  • Olive oil

  • 1-2 shallots, chopped

  • ¾ cup panko breadcrumbs

  • 1 egg

  • ⅓ cup of Liberté’s mediterranée plain yogurt (10% fat)

  • 1 teaspoon Dijon mustard

  • 1 teaspoon paprika

  • ½ teaspoon garlic powder

  • ½ teaspoon salt

  • Neutral oil for cooking (vegetable oil, sunflower oil, etc.)

  • Green Goddess Yogurt
  • 1 cup fresh spinach

  • ¾ cup fresh basil

  • ½ cup fresh dill

  • 1 cup of Liberté’s mediterranée plain yogurt (10% fat)

  • Juice of ½ lemon

  • 2 teaspoons capers, drained

  • 1 clove garlic, minced

  • 1 teaspoon maple syrup

  • ¼ teaspoon salt

  • To serve
  • Salad, rice, etc.

Instructions

  • Preheat the oven to 400F and place the rack in the middle. On a large baking sheet, place the salmon filet, drizzle with olive oil, and season well. Bake in the oven for 13-15 minutes. Allow the salmon to cool completely. This step can be made ahead of time.
  • Using a fork, flake the salmon into pieces and place them in a large bowl. Add 1-2 chopped shallots, ¾ cup panko breadcrumbs, 1 egg, ⅓ cup plain yogurt, 1 teaspoon Dijon mustard, 1 teaspoon paprika, ½ teaspoon garlic powder, and ½ teaspoon salt. Mix well.
  • With your hands, shape 16 patties about 2 inches in diameter. Place on a plate and refrigerate.
  • Prepare the green goddess yogurt. In a food processor, finely chop 1 cup of spinach, ¾ cup of fresh basil and ½ cup of fresh dill. Then add 1 cup of plain yogurt, lemon juice, 2 teaspoons of capers, 1 minced garlic clove, 1 teaspoon of maple syrup, and ¼ teaspoon of salt. Pulse until smooth. Set aside.
  • In a large skillet over medium heat, heat the neutral oil. Cook half of the salmon croquettes for 2-3 minutes on each side. Reserve on a plate and repeat with the remaining croquettes.
  • Serve on a plate with the green goddess yogurt, with sides of choice.
