This strawberry rhubarb crisp is the perfect summer dessert! Juicy strawberries with the tart taste from the rhubarb and a beautiful crispy oat topping.

Ingredients

  • Filling
  • 2 cups of sliced rhubarb (about 5 stalks)

  • 3 cups of strawberries, cut into cubes

  • ⅓ cup of white sugar

  • 1 tsp of vanilla extract

  • 1 tbsp of cornstarch

  • Topping
  • ½ cup of white all purpose flour

  • ½ cup of rolled oats

  • ⅓ cup of brown sugar

  • ½ tsp of ground cardamom or ground cinnamon

  • ¼ tsp of salt

  • 6 tbsp of unsalted cold butter

  • Serve with vanilla ice cream

Instructions

  • Preheat the oven to 375F.
  • In a big bowl, combine all the ingredients for the filling.
  • Pour the filling into a 10” cast iron pan or square baking dish (8”).
  • In another bowl, mix the flour, rolled oats, brown sugar, cardamom and salt. Mix well with a spoon. Add the cold butter and use your fingers to incorporate to create a crispy topping. Transfer over the filling.
  • Cook for 40-45minutes.
  • Let it sit for a few minutes and serve with vanilla ice cream.
