Sweet Potato Latkes Ingredient List

  • Sweet potatoes: you’ll need 3 sweet potatoes for this recipe. Remove skin and shred them.  
  • Eggs: 2 eggs
  • Flour: all purpose flour but you can also use gluten-free flour.
  • Cooking oil: choose neutral cooking oil, such as avocado oil or vegetable oil. 

How to Make Sweet Potato Latkes?

  1. Prepare the sweet potatoes. First, remove the skin and gratte the sweet potatoes.
  2. With a dish cloth or tea towel, add the grated sweet potatoes and press firmly with your hands to remove as much liquid as possible.
  3. Prepare the latkes. Whisk the eggs in a big bowl. Add the sweet potatoes, flour and season well. Mix with your hands. Spoon 1 tablespoon of the mixture and form latkes by pressing gently with your hands (2 inch length).
  4. Cook them! In a big pan over medium heat with oil.
  5. Place them on a paper towel to remove any excess of oil and sprinkle with sea salt.

Can I Prepare the Latkes in Advance?

  • Before cooking them: you can form the latkes and place them in the fridge until you’re ready to cook them.
  • After cooking them: I love to serve them warm, but you can also serve them at room temperature. You can reheat them in the oven for a few minutes (350F). 

How to serve them?

You can serve them on their own with sour cream or plain yogurt. I love to add smoked salmon and chives as well.

Expert Tips

  1. Make sure you press the grated potatoes with a tea towel to remove as much liquid before making the latkes.
  2. Wait for the oil to be warm before adding the latkes and cook them 3-4 minutes per side.
  3. Add sea salt on top of cooked latkes when they’re still warm.

  • 3 sweet potatoes (medium size)

  • 2 eggs

  • ¼ cup of white all purpose flour (or swap for gluten-free)

  • 1 tsp of salt

  • Neutral cooking oil (about ½ cup – avocado oil or vegetable oil)

  • +/- ½ cup of sour cream

  • 80g-100g of smoked salmon

  • Shredded chives to garnish

Instructions

  • Prepare the sweet potatoes. First, remove the skin and gratte finely the sweet potatoes. With a dish cloth or tea towel, add the grated sweet potatoes and press firmly with your hands to remove as much liquid as possible.
  • Prepare the latkes. Whisk the eggs in a big bowl. Add the sweet potatoes, flour and season well. Mix with your hands. Spoon 1 tablespoon of the mixture and form latkes by pressing gently with your hands (2 inch length).
  • Add the cooking oil to a big pan. When it’s warm, gently add the latkes (about 5 at the time) and press with a spatula. Cook for 3-4 minutes per side without flipping while they cook. Transfer to a plate with a paper towel to remove any excess of oil. Sprinkle them with sea salt. Repeat with the remaining latkes.
  • Serve the latkes with sour cream, smoked salmon and chives.
