This Tuscan soup with sausage, potatoes, and kale is perfect for a comforting, flavorful meal. Easy to prepare, it combines delicious flavors with crispy bacon, sausage, sun-dried tomatoes, and a creamy touch. You’re going to love it!

Ingredients

  • 1 tbsp olive oil

  • 4-5 slices of bacon, cut into pieces

  • 375-400g of mild Italian sausage meat

  • 1 yellow onion, chopped

  • 2 tbsp tomato paste

  • 4-5 sun-dried tomatoes (in oil), chopped

  • 2 garlic cloves, chopped

  • 1 tsp garlic powder

  • 1 tsp dried oregano

  • ½ tsp red pepper flakes

  • 450g yellow-fleshed potatoes, peeled and diced (about 3 cups)

  • 5 cups chicken broth

  • 1 ½ cups 15% cooking cream

  • Leaves from 3-4 stems of kale, coarsely chopped

  • Grated Parmigiano Reggiano, for garnish

Instructions

  • In a cold pot, add olive oil and bacon pieces. Turn the heat to medium and cook for about 5 minutes, or until the bacon is crispy. Remove and set aside on a plate. If necessary, drain some of the bacon fat from the pot.
  • In the same pot, brown the sausage meat, breaking it into pieces with a wooden spoon, for about 4 minutes. Remove and set aside.
  • In the same pot, add the chopped onion and ½ tsp of salt. Cook for 4-5 minutes. Then, add the chopped sun-dried tomatoes, tomato paste, chopped garlic, garlic powder, dried oregano, and red pepper flakes. Mix well.
  • Add the diced potatoes (3 cups) and 5 cups of chicken broth. Bring to a boil. Return the sausage and bacon to the pot. Lower the heat, cover, and simmer for about 15 minutes, until the potatoes are cooked.
  • Add 1 ½ cups of 15% cooking cream and the kale. Cook for 2 minutes. Adjust seasoning with more salt if needed.
  • Serve in bowls and garnish with grated Parmesan cheese.
