Vegetarian Black Bean Burritos with Halloumi (30-minute Dinner)

These vegetarian black bean burritos with halloumi are an easy sheet pan dinner ready in less than 30 minutes. It’s a healthy, delicious and nourishing weeknight dinner.

Ingredients List: Vegetarian Black Bean Burritos

Pan sheet cooked veggies and halloumi mixed with black beans and rolled in tortillas for a quick and easy dinner.

  • Halloumi cheese: we love to grill halloumi cheese and mix with all the spices. It brings a tangy and salty taste.
  • Black beans: use canned beans. Rinse well before using.
  • Red onion: diced red onion will bring sweetness to this recipe.
  • Red pepper: to add crunch. You can also use yellow or orange pepper.
  • Corn: use canned corn. 
  • Spices & olive oil: we use paprika, cumin, chili powder and onion powder. We also drizzle olive oil on the sheet pan. 
  • Lime juice: for acidity.
  • Tortillas: I like to use whole wheat tortillas.

How to Make Vegetarian Black Bean Burrito with Halloumi?

  1. Pan sheet cooked veggies & halloumi: we first add diced red onion, diced red pepper and halloumi cubes onto a baking sheet with spices, olive oil and lime juice. We cook it for 20 minutes, tossing halfway through. 
  2. Add corn and black beans: add to the cooked veggies and halloumi and mix.
  3. Assemble in a tortilla and grill: spoon the mix in the center of each tortilla, add avocado/guacamole and lettuce, leaving room all the way around. Fold each tortilla and grill in a cast iron pan or panini grill. Serve with salsa and/or sour cream.

Serving Suggestions:

  • Sliced avocado or homemade guacamole. Here’s an easy way to make guacamole: in a small bowl, peel and mash 2 ripe avocados. Add juice of ½ lime and 2 tbsp of plain greek yogurt. Season and mix well.
  • Lettuce for some crunch
  • Salsa: either store-bought salsa or pico de gallo.
  • Sour cream or plain greek yogurt for a delicious creamy condiment.

How to Store it? Can You Prepare Vegetarian Black Bean Burrito in Advance?

Meal prep: you can prepare this recipe in advance. I recommend assembling the tortillas when you’re ready to eat. You can easily prepare burrito filling mix beforehand. Store in an airtight container in the fridge for up to 5 days.

Leftovers? The black bean burrito filling can also be enjoyed as a burrito bowl. Serve it over brown rice or quinoa and add your favorite toppings.

Ingredients

  • 235g-250g of halloumi cheese, diced into cubes

  • 1 red onion diced

  • 1 red pepper diced

  • 2 tbsp of olive oil

  • Juice of ½ lime

  • 1.5 tsp paprika

  • 1.5 tsp cumin powder

  • 2 tsp chili powder

  • ½ tsp onion powder

  • ½ tsp of salt

  • 1 can of black beans, rinced (540ml/19oz)

  • 1 cup of corn (use canned corn)

  • 4 tortillas

  • Guacamole or sliced avocados*

  • Iceberg lettuce

  • Serve it with: salsa and/or sour cream

Instructions

  • Preheat the oven to 425F.
  • On a baking sheet with parchment paper, add halloumi, red onion and red pepper. Drizzle with olive oil and add the spices as well as lime juice. Toss well with your hands. Cook for 20 minutes, turning half way through.
  • Add black beans and corn to the pan and toss well.
  • Assemble in a tortilla and grill: spoon the mix in the center of each tortilla, add avocado/guacamole and lettuce, leaving room all the way around. Fold each tortilla in half, fold up each end, and roll the burrito away from you to completely close it.
  • Grill each tortilla in a cast iron pan or panini grill. Serve it with salsa and/or sour cream
