Flourless Oatmeal Almond Butter Cookies

These almond butter cookies are moist, gooey and super easy to make. With only a few ingredients you’ll get the perfect healthy cookies.

They’re also gluten-free and refined sugar-free, since we’re using gluten-free oats and almond butter as a base. And they’re amazing!

Please add chocolate chips and enjoy with a coffee for a mid-afternoon snack or for dessert with a tea or glass of milk!

Can I Use Peanut Butter Instead of Almond Butter for This Recipe?

I understand almond butter is expensive, so feel free to use peanut butter instead. I’d recommend using natural peanut butter. In my opinion, any kind of nut butter works, it will just change the flavours. But I promise it will still taste good!

Where to Buy Almond Butter?

You can make your own almond butter with natural almonds or buy it at the grocery store. I get mine at Costco, it’s the cheapest and the best in terms of cost value, in my opinion.

Are Almond Butter Cookies Healthy?

Yes, they are! Almond butter is a source of good fats as well as fibre. I promise these cookies will keep you full for hours! Plus, almond butter is slightly healthier than peanut butter because it has more vitamins, minerals, and fibre.

Freezer-friendly

Yes, you can. Please make sure they cool down completely after baking them. After that, place them on a baking sheet in the freezer for 1 hour. Finally, store them in a freezer-safe zip-top storage bag for up to 4 weeks (1 month).

These flourless oatmeal almond butter cookies are moist, gooey and super easy to make. With only a few ingredients you’ll get the perfect healthy cookies. 

Ingredients

  • Almond butter : 1 cup

  • Maple Syrup : ⅓ cup

  • Egg : 1 egg or Flax egg

  • Vanilla : 1 tsp

  • Baking soda : 1 tsp

  • Oats : 1 cup of whole oats

  • Chocolate chips (dark 50%) : ½ cup

  • Salt : Pinch of salt

Instructions

  • Preheat the oven to 350 degrees F.
  • In a large bowl, combine almond butter, maple syrup, egg and vanilla. Mix well.
  • Add oats, baking soda and sea salt. Mix well to combine.
  • Add chocolate chips and stir.
  • Line a large baking sheet with parchment paper or silicone baking mat.
  • Roll balls of dough -about 1 Tablespoons of dough each- into 12 balls. Press each ball to give it a cookie shape.
  • Bake for 12-14 minutes.
  • Let it rest for 5 minutes and enjoy 🙂

  • Homemade Oat Milk : here
  • Optional : add ½ cup of oats pulp from homemade oat milk to the batter at the same time as the whole oats in the recipe steps.
